Sounds yummy! A woman from our church makes some of the best corn casserole I've ever had - starting with the Jiffy mix! I need to make that soon.

We had leftovers, meatloaf, potatoes, and mixed veggies.

Dr. Pepper boneless ribs in the crock pot with avocado-corn salad, and rolls for the boys.

Recipe for the Dr. Pepper ribs, please!

I lurk on this thread a lot but would be embarrassed to put down our meals here. Y'all have inspired me!

Dr. Pepper Ribs (Kitchen fun with my 3 sons)
Ingredients:
4.5 lbs. country style pork ribs{I used boneless ribs}
2 12oz. cans Dr. Pepper soda, divided
3/4 cup BBQ sauce
2 tsp. liquid smoke
1 tsp. garlic powder
1 tsp. ground black pepper

Directions:
In the slow cooker, pour 1 can of soda over ribs.
Cover and cook on low for about 7 hours or on high for about 4.
Preheat oven to 400 degrees F and line a baking sheet with foil.
Place a wire rack on prepared baking sheet.

Stir together BBQ sauce, liquid smoke, garlic powder and pepper with 1/2 cup Dr. Pepper.
Move ribs from the slow cooker to wire rack.
Brush ribs with sauce and bake for 15 minutes.
Flip ribs, brush again and bake for an additional 15 minutes.
Serve hot with remaining sauce.

Homemade beef vegetable soup, made/frozen in early December (when it was still 60 degrees outdoors) to be thawed and enjoyed this winter (when it's only 40 degrees outdoors; nevertheless, I'm hungry!).

Had to make this batch with chicken broth, as store had both beef and chicken broths on sale but kept selling out of the beef. The soup actually tastes sweeter when chicken broth is used, with the ground beef meat, instead of beef broth.

Sorry to hear about your tummy, FSUZeta!

We had breakfast for dinner last night, as I also have an upset stomach.

I'm hoping to make potato soup this week, but we both have crazy schedules and I'm trying to figure out the best night. Sadly, potato soup just doesn't freeze well.
