I can give you some advice but it depends on h your greek week works. These ideas are all a ton of fun but do help unite the different fraternities.
During our greek week we have a number of events. Points are awarded for each place. Whoever has the most points at the end of the week wins. But as something on the side we also raise money for charity. We have something we call an Ugly Man Contest. We get guys from each fraternity to volunteer to use their picture. Then we have a table set up throughout the week with all the different pictures of the guys on buckets. People get to vote who they think is the ugly man. They vote by putting money in the bucket of the guy they think should win. The bucket with the most money is the fraternity that wins and they get the points towards the overall greek week winner. But all the money goes to charity. If you need some ideas for events- I also have those.

Put on a sorority/fraternity football countdown. Each sorority plays each other untill there is only one left and the same for fraternities. Then the winning sor. and winning frat. plays each other. Charge money for the final game. Or you could create teams with random people from each sorority and fraternity. The money would go to philanthropies and putting random people on teams would create unity among the greek orgs. on campus. You can have various contests, best legs, best greek couple, best smile, best looking, best hair. Have people vote on people from each frat and sor. and charge a $1 for each person to vote. Get a local band to come to the campus and play a free concert for cherity (charge admission, but have the band play free.) all $'s go to philanthropies.

During Greek Week on my college campus, we kicked off the week with a parade. Then, there was a talent night, skits, non-alcoholic mixers, community service projects, sporting events, and it ended with the annual Greek Awards. Each fraternity was paired with a sorority and a BGLO. So, there were at least three organizations per group. It was always a lot of fun and a great learning experience as well. Good luck!
