I'd take a look around your campus and see what some of the other chapters are doing/have done. Consult with your Greek Adviser to find out what the timeline is for Bid Day (IE: When do the PNMs open their bids, when do they come to their new respective houses, etc.), and talk to your sorority's regional alumna recruitment director for some suggestions regarding things other chapters of your sorority have done.
Some ideas: pick a theme and host a luncheon. You will want to have a gift pack for your new members, name tags, signs to greet the new members, photographer to take candid and formal portraits of the chapter and the new member class. Assign each new member an active sister to serve as her Bid Day Buddy for the day, play getting to know you games. Leave a good amount of free time for people to eat and mingle.
Also, take the new members aside for a meeting with the president, new member coordinator and chapter adviser as a "debrief"-- congrats, calendar of upcoming events, give them a breakdown for dues and when the first payment is due, expectations for conduct as a new member, express how excited you are to have them as your sisters, briefly discuss what they can expect from new member ed, take questions, and maybe conclude by presenting them with a gift or a serenade from the sisters.
Have some music-- keep it casual and light-- it's a celebration!
Some themes: Simply the Best, Everyone Loves an XYZ Girl, Flower theme (XYZ: We know how to pick 'em!), Tiffany and Co theme, Wizard of Oz (There's No Place Like Home), etc.
