Long and rather stressful day, with another long day tomorrow.

We went to Sonic. I had a corn dog & pretzel twist, hubby had a grilled cheese & pretzel twist, and we split an order of tater tots. Total junk food!

I love Tater Tots.

We had leftovers-sort of a ratatouille over pasta. Tomatoes and eggplant roasted in the oven. Mushrooms and onions sautéed in butter on the stove. Yum!

I love Tater Tots too. One of my "girl dinners" (as is all the point of discussion these days) is tater tots in a casserole dish with bacon and shredded cheese on them. I bake them and they are totally yummy. Really wishing I had some tater tots in the house now. Since I don't, I guess it will be nachos.

I came down with diverticulitis , so applesauce and some rice cooked in bone broth.

Sorry to hear about the diverticulitis, FSUZeta. Hope you're feeling much better by now.

Does anyone have a recipe for those little potatoes, boiled, then smashed on a baking sheet & baked? I have the potatoes, and a clue, but I'm interested in seeing what y'all would do with them.

We had crockpot chicken breasts, garlic mashed potatoes, Texas toast, and cucumber, tomato and onion salad.
