One of my favorites from way back when was making dog biscuits for the local animal shelter. We made the dough by hand, cut them with dog-bone shaped cookie cutters and brought them over to the shelter. The dough was really sticky and fun to play with, so it was very hands on! I'm sure there is a recipe out there somewhere on the web.
Another one we loved to do was to make signs for the doors of the local children's hospital. We did them for Valentine's Day and Christmas/Channukah, etc and general "Welcome to your Room" signs. This one is really easy, because all it takes is some construction paper, markers and decorative stuff like glitter and stickers. We put them all in a file box, with the files marked appropriately and when they had a new resident, they had a welcome sign and then ones for the holidays. We also did gallon-sized Ziploc bags with small packs of crayons, a coloring book, a small puzzle, and some small toys (whatever we could find in the dollar store) and made a bunch of those so each child had something that was their very own. Check with your local children's hospital or the children's wing of any local hospital to see if this is something you can do for them. We had an on-going relationship and whenever they were running low on something, they'd let us know and we'd do a DID (Done in a Day) project of putting more together for them!
Another one, though it was really more along the lines of a fundraiser, was to work the concession stands at a local sporting event (ours was hockey games). We got a percentage of the profits, but we donated them to a local charity.
I know you were looking for cool/unique, and I'm not sure how these measure up,but .............Just some thoughts.....

For oncampus...
I took a quick look at the TCC-SE web page and the first thought that came to mind was to find out if the Drama Department needs Ushers for their presentations of Proof and Nunsense. Might be a money maker, might just be a way to get people to see you in some form of letters (or does Nationals still sell the Armbands?)
Also, are there any likely outdoor community service projects outside near the lake to the ESE of the campus?

"Paint the Ronald McDonald House GREEN" One of my old ideas for March service projects. Make paper shamrocks to give to people (students, townies, family, etc.) in exchange for $1.00 donations collected for the local Ronald McDonald House. The first year we did this, we collected well over $3,000!
