Today, (Mon.) Shepard's Pie with dashes of Worcester sauce. Lady dropped of a sack of Onions, Green Grapes, 2 Oranges and 2 Peaches.

Now trying to figure out when I can or will eat them, LOL!

Did not leave school until 5 ( anyone who thinks teachers show up at 8:00 and leave at 3:00 or 3:30 needs his/her head examined). 30 minute drive home, so a Fufi apple chicken salad for me and a Cuban sandwich for hubby from Panera.

Vegetarian Korma

1 1/2 TBSPs olive oil

1 tsp minced fresh ginger root
4 cloves garlic, minced
2 potatoes (I use large red potatoes) diced

3 TBSPs raw, unsalted cashews, ground

1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 cup heavy cream

Heat oil in Dutch oven over med heat. Stir in onion and cook until tended. Mix in ginger and garlic, stir for 1 min. Mix potatoes, carrots, jalapeņo, cashews, and tomato sauce. Season with salt and curry powder. Cook and stir until potatoes are done. Stir in peas, the bell peppers and cream, reduce heat to low, simmer while stirring constantly. Garnish and serve with rice.
