Last night, my daughter and her boyfriend made a highly labor intensive Italian dish called "Il Timpano." The whole process took about 5 hours and we ate at 9:10 pm.
Of course, we had to "ooooh" and "aaah" about it, and it was good, but to tell you the truth, I don't think it was worth the time and effort involved.
Apparently, it's from a movie. It's kind of like lasagna inside a pastry crust.
Sorry that image is so big.
However, its size realistically represents the amount of effort and accompanying cooking tension going on in our kitchen yesterday.

Had way less beef roast than taters and carrots. Great idea on my part! Thawed out some pork roast, added some baby carrots in Crock Pot.
Worked wonders, waste not, want not, LOL!

I have to tell you, Tom, you are a good inspiration of a man who's able to fend for himself. Too many younger men don't know how to cook anything that doesn't involve a microwave! EVERY man should be able to cook at least a week's worth of food!

Thai beef with peppers -- another Ree Drummond recipe that I love. I also add broccoli florets to give it extra veggies.
My daughter and I went to a neighborhood Christmas cookie exchange on Tuesday. A couple people actually brought burned cookies -- not just a little overdone, but charred on the bottom.
My son was mad we traded away our cookies for some inferior specimens! Lol

Leftover beef stew with potatoes and veggies, since we have to make room in the refrigerator for The Big Holiday Meal.

Merry Christmas Tom. Ham, beans and cornbread-nectar of the Gods.
Marinated a beef tenderloin for Christmas, made skin on mashed potatoes, roasted Brussels sprouts, daughter roasted an assortment of veggies, she has a kahlua chocolate cake and I baked gluten free lime bars. Delish!

Got Apple Pie in oven as I type!!
Got Horse Radish and Mayo warming up to try Horseysauce like Arby's.
Then nuke up some thin slices of Beef and spread sauce on litely toasted bread!
Will let all know if I did good or not???

Indeed!
Not for dinner, but I'm having leftover ham and yams for lunch. Yummy!

Crazy as it may sound, Boiled Shrimp and Taters!!!! Just a bit off beat don't you think, LOL!
Also, Aldi had YELLOW POTATOES for .99 for 5 lb. bag. Never seen them before? Anyone else had them? If I like them, think I will make some tater salad!!

Do you mean Yukon Gold potatoes, Tom? If so, they're good.

Yellow potatoes are the best for mashed potatoes.
