txdiva- thank you for your kind words. On leftovers, some things are just better after a day or two in the fridge. My stir frys certainly are- and for some reason I think my fried chicken is better cold after a day in the fridge. I cook food in advance for 3-5 days, and so most of my meals are technically "leftovers". Works for me...

My mom made this dish that's like enchiladas in a casserole. It's got tortillas, shredded chicken, and poblano peppers in layers. There's cheese on the top, too. Num num num!

I have a recipe that sounds similar to this that I got while in New Mexico. It calls for blue corn tortillas, shredded chicken, green diced chiles, cream of mushroom and chicken soup, sour cream and shredded cheddar in layers.
I think tonight we're having tapas.

No real recipe. I use olive oil, champaigne vinegar, a little salt and fresh pepper, some chopped shallots, garlic and a little sugar. Shake it up and kepe it refrigerated.
For a short cut Marzetti's has a premium line called, Girard's. They have two Champaigne Vinegrettes, one is a reduced calorie

After a 14 hour workday and a super-crazy-fast 40 laps afterward in the pool to "de-stress", chicken and vegetables just wouldn't cut it. I just got back from Chuy's where I wolfed down a beef fajita platter in about 10 minutes. Feels good! Yeah!

PS- Thanks for the ingredients list Benzgirl. I actually have some champagne vinegar believe it or not. Came in some gift basket at Christmas and now I know what to do with it.
