[QUOTE=FSUZeta;2470776]Vegetarian Korma

1 1/2 TBSPs olive oil
1small onion diced
1 tsp minced fresh ginger root
4 cloves garlic, minced
2 potatoes (I use large red potatoes) diced
4 carrots diced
1 fresh jalapeņo seeded and chopped
3 TBSPs raw, unsalted cashews, ground
1 8 oz can tomato sauce
2 Tsps salt
1 1/2 TBSPs curry powder ( or to taste; I use more)
1 can garbanzo beans, drained
1 cup frozen green peas
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 cup heavy cream
1 bunch fresh cilantro for garnish, if desired

Heat oil in Dutch oven over med heat. Stir in onion and cook until tended. Mix in ginger and garlic, stir for 1 min. Mix potatoes, carrots, jalapeņo, cashews, and tomato sauce. Season with salt and curry powder. Cook and stir until potatoes are done. Stir in peas, the bell peppers and cream, reduce heat to low, simmer while stirring constantly. Garnish and serve with rice. Made it tonight and it was delicious...thanks for the recipe! it's a keeper!

Question -- how long do you typically "cook and stir until potatoes are done?" I'm almost thinking that next time I'll cut that shorter and let it simmer on low in the crock pot after the cream is added, until the potatoes are tender.

Exhausted, so frozen GF dinner for me. Hubby ate a piece of cake and had some ham slices with cheese- in that order.
