Leftovers-the red beans and andouille cooked very well in the Instant Pot, but I did have to add 20 minutes to the pressure cooking over what the recipe called for, to soften the beans.
They were excellent!

Reruns of yesterday's ham dinner for us.

What makes me happy is that we had much more ham than we could possibly have needed. We have a friend who is the sweetest guy, but not exactly college material. He also has no family left. I packed up a lot of the ham, the sides, and dessert for him, and he was tickled pink. We would have loved to have had him here, but he had to work. We plan to do this more often!

Left over Easter ham. I cooked an 8lbs ham on Sunday. I have about 1/3 left. Getting tired of eating ham for lunch and dinner. I'll add the ham bone to my homemade split pea soup.

That's pretty much what I did - separated several meal portions and froze them. I also froze the ham bone, for soup, beans, or other flavoring.

Cereal, with added fruits and nuts. Breakfast had been an avocado/turkey/bacon crepe, so it evens out nutritionally.
