Avocado mayo sounds delicious!

I have no idea what we are having for supper tonight. I am uninspired.

Tomorrow we are baking a corned beef brisket. We will have carrots, along with sautéed cabbage and onions.

Butter Chicken and Jasmine Rice. Turned my face red from all of the Indian spices.

I typically don't do corned beef and cabbage but I love my Reubens. Even though Reubens were originated in Jewish delis, they are close enough to St. Patrick's day.

My brother used to prepare delicious corned beef and cabbage this time of year. Today, CB&C ordered from a local eatery must suffice.

Whatever adds-up to at least 500 but no more than 800 calories, as I am near my daily maximum caloric intake.

Sadly, mr. honeychile likes that awful Velveeta based mess. His mother actually gave me a log of the stuff!

Meanwhile, one of the first things I learned to cook was macaroni & cheese - starting with a white sauce. Oh, the horror!

^^^ One of the shower gifts I received from my MIL was a box filled with Appian Way pizza mix. She swore he loved it, but it was really just "cheap college eating" on his part -- I never used those mixes.

I love it when Ree Drummond uses Velveeta and says she inherited it from her great-grandmother and it's still "good" (unexpired).

I actually had some Velveeta go bad. It grew mold. It was at the back of the pantry.

I make a Southern Living Mac and Cheese recipe, which uses Velveeta in the sauce, along with cheddar. It is a delicious recipe.

Tonight, I am trying Red Beans with andouille sausage in the Instant Pot. We shall
see.....
