And YES….we used Jiffy cornbread mix—59 cents a box on sale!! I remember my mom using Jiffy mixes when we were growing up. Hard to beat!

Sounds yummy! A woman from our church makes some of the best corn casserole I've ever had - starting with the Jiffy mix! I need to make that soon.
We had leftovers, meatloaf, potatoes, and mixed veggies.
