I think this looks gorgeous...and tasty!

This was the cake at one of my favorite weddings:

http://images.marthastewart.com/imag..._croquem_l.jpg

Here's the description from Martha Stewart:
"This towering confection is the traditional wedding cake of France. The name croquembouche, which means "crunch in the mouth," refers to the hard caramel that coats delicate puffs of pate a choux filled with vanilla cream. The top tier rests on an edible nougatine base, made of caramel and crushed almonds. The roses and ribbons are pastillage, a sugar paste that dries with a porcelain-like finish; the giant swirls are pulled sugar."

This was our wedding cake. It was just vanilla with butter cream icing...obviously topped with strawberries! Yum!

I couldn't resist...

Ok, seriously though, some inspirations for my wedding cake, colors will be chocolate brown, shades of green and accented with pale pinks and maybe lavendar, early botanical theme:

Maybe something like this? (I love cymbidium orchids but I'm unsure how to incorporate them into our theme since they're so bright):

How in the heck did they cut that!? I picture it just falling over once any attempt was made to move it

I think it's more like Jenga - whoever takes a cupcake out that causes it to topple has to eat the rest of the cupcakes left. :D

Seriously! I guess "cut" isn't the appropriate word but but you got my point.

My cousin and his new wife. Had a gorgoues cake. It was so delicious too. I also love my cousin's groom cake!

I'm pretty sure you're just supposed to take them off of the tower, like picking pastry fruit off of a tree (sorry for the reference, I'm high on caffeine and it seems to make sense to me).

Yes, you just take it apart from the top. Croquembouche is not a cake as we picture them; they're little caramelized pastry balls, which you then drizzle chocolate sauce, caramel, or frut over. My friend chose this as her wedding "cake" because it's what her parents had at their wedding. It was a site to see! Actually, theirs did not have the two tiers - it was just a tall pyramid about 6 feet tall! Oh, and it was SO GOOD.

DH and I had a four-tiered cake with staggered tiers. The concept is this:

http://weddings.lovetoknow.com/wiki/...c/ce/Cake2.jpg

except the tiers were different sizes.

The bottom tier was chocolate, and the second-to-bottom tier was white. Those were the two tiers served at the reception. We got the top two tiers to take home. The top tier was supposed to be chocolate, and the second-to-top tier was supposed to be swirl, but they were backwards, so we got a bit of a surprise when we cut into our top tier on our first anniversary and found swirl. ;)

I'll see if I can find a good picture to scan in.

I was adamant that I did NOT want the standard one-tier-on-top-of-the-next, buttercream and fondant, whiter-than-white wedding cake. I was also adamant that if there was going to be a cool groom's cake designed around DH's tastes, that there would be an equally cool bride's cake designed around my tastes. :p But we didn't have a lot of guests, so we just went with the one cake.

I love Croquembouche!

I've heard of some couples doing cheesecake for their weddings lately. Anyone here do something other than cake like cheesecake, pie, etc?

My friends that got married last fall had truffles.

PeppyGPhiB 03-07-2008 01:51 AM

One of my friends had three tiers of cupcakes.

My bio sister's cake had cheesecake in it. Each tier was 2 layers, the bottom layer was white chocolate raspberry cheesecake and the top layer was pound cake with raspberry jelly (or whatever it is) in the middle - very yummy.

Mine was just your regular 3 tier almond pound cake with buttercream, but still very pretty and tastey ;)

ForeverRoses 03-07-2008 10:31 AM

My (biological) sister had a cheesecake. My brother-in-law doesn't like cake. It was a big square cheesecake, covered in fresh strawberries with a smaller square elevated in the middle with a mound of stawberries on top.

They didn't do a traditional cake cutting, it was just cut up and served at the end of dinner as the dessert. (but it did sit in the middle of the room during dinner). My sister said that the biggest problem was that cheesecake can't sit out under the lights as long as regular cake- hence them serving it for dessert.

I went to a wedding last May where the groom's cake was an ice cream cake. In case anyone was considering this, I'm warning you it is very messy. The poor girl assigned to cut that cake was having a hard time, so I stepped in and basically just started to scoop "pieces" onto plates with two forks. Maybe if it would work if it comes directly from the freezer, but I still don't recommend it.

Here's our cake:

I'm trying to find a picture of our groom's cake - it looked like the Home Depot Tony Stewart NASCAR. Haha =)

Here's my cake (plus me and Mr. TNPhiMu)! It was almond with buttercream from Sweet & Sassy in Nashville... best.cake.EVER. His was strawberry with chocolate (pretty traditional) but also AMAZINGLY yummy (but I don't have a picture of his here at work).

TN, I love your dress!!! Sorry, I'm gown-focused at the moment, lol.

honeychile 03-20-2008 01:45 PM

TNPhiMu, I don't know which I love more, you & your dress or your cake! Both are absolutely lovely!!

TNPhiMu 03-20-2008 04:27 PM

Thanks Honey! I absolutely LOVED my dress... and the cake. I so wish I could wear the dress around everytime I have a bad day. But, with the cost of preserving and boxing that baby, I think I'll keep it wrapped up!

ADqtPiMel 03-20-2008 06:09 PM

Mah cake (and me looking a bit confused about how to cut it).

LucyKKG 03-20-2008 06:35 PM

^^ That's so cute! I wouldn't know how to cut it either. Maybe just cut off a corner? Lol.

KSUViolet06 03-20-2008 06:47 PM

Mel, I love your cake.

ISUKappa 03-20-2008 07:01 PM

Here's ours (from 4.5 years ago):
http://img.photobucket.com/albums/v5...ding/cake1.jpg
Each layer was something different. I think we had white with white filling, lemon with white filling, white with raspberry filling and lemon with raspberry filling. We had a local gal who did cakes out of her home, so it's not quite as "professional" looking as some, but it was so tasty! I wasn't the happiest with how big the cake topper turned out, but like anyone really cares about that anyway.

Grooms cake:
http://img.photobucket.com/albums/v5...ding/cake2.jpg
OMG, this was the yummiest thing ever. It was some rich chocolate cake with chocolate kaluha filling and chocolate ganache frosting. I barely got a tiny piece and poor hub didn't get any. We let the cake lady decorate it however she wanted, so it doesn't quite match the other cake, but again, like anyone noticed or cared.

Thanks! It might be hard to tell in the pic, but the fondant was light green. The cake itself was tuxedo cake (one layer french vanilla and the other chocolate fudge) and man was it tasty.

Who are you? Tiffany and Cartier rings "all the way" and now "Sylvia Weinstock all the way"? You're a little too proud of yourself, trying too hard to put down others' choices.

nittanyalum 04-04-2008 11:47 PM

^^^Judging by the link in her signature (which she has made efforts to post in pretty much every forum, it seems), perhaps she is Brenda Myers, Independent Beauty Consultant for Mary Kay Cosmetics?

LOL. I hadn't noticed that. I do find that a little amusing for someone so passionate about Tiffany and Cartier. I know, I know, lots of women love Mary Kay...but I don't know many women that would call it top-of-the-line. It gives me a rash.

SWTXBelle 04-05-2008 09:18 AM

Maybe Mary Kay is now giving away pink Sylvia Weinstock cakes along with the Cadillacs?

Benzgirl 04-05-2008 10:44 AM

Has anyone been to a wedding that they have a Cupcake Wedding Cake? http://www.ouroneheart.com/wedding-cupcake/ I love the idea and if I ever get married, that is what I'll do.

KSUViolet, I have been to several weddings in NE Ohio where they have served cheesecake. But, the more popular cake (particularly in the Italian community) is the Cassata wedding cake. It's fabulous!

Thank you, yes!
