That's okay. I usually make enough for 2nds-I either freeze to for later and we eat it the next day. Saves time in the kitchen, especially when I don't leave school in enough time to cook.

Last night; stuffed sweet potatoes.


1 lb. ground turkey
1-2 packages taco seasoning (to taste), follow package directions. If using 2 packages, double water.
Sweet potatoes
1 can black beans
1 jar salsa

Tom that is an easy recipe. I brown some ground turkey and then add some taco seasoning, following package directions. I stab a sweet potato and cook it in the microwave (but you can cook in the oven) for about 8-10 minutes. Let the sweet potato cook and then scoop out the insides into a bowl. Top with some of the turkey taco meat, canned black beans, and salsa.

Sorry this took so long. I completely forgot!

Turkey Pumpkin Chili (Slow Cooker or Instant Pot)

2 lbs. ground turkey
1/2 tsp. olive oil
1 small onion, chopped
3 garlic cloves, minced
1 tsp chili or to taste (I use much more)
2 bay leaves
2 tsp cumin or to taste (I use much more)
1 tsp oregano
2 15 oz cans white northern beans
4.5 oz can chopped green chile
15 oz canned pumpkin
2 cups low sodium chicken broth
salt and pepper to taste
chopped cilantro, red onion, or chives for topping
Greek yogurt or low-fat sour cream for topping

Heat heavy saute pan over high heat and spray with oil. Add meat and cook, breaking it up until it turns white about 5 minutes. Add to crock pot.

Add oil to pan, then onions, garlic and saute about 3/4 minutes, add cumin and saute another minute. Add to crock pot.

Add beans, pumpkin, green chilis, broth, chili powder, oregano, and bay leaves.

Cover and cook on high for 4 hours or low for 8 hours. Remove bay leaves and adjust to taste before serving.

Instant Pot version

Press saute and lightly spray with oil. Add meat and cook, breaking it up until white, about 5 minutes. Set aside.

Add oil to the saute pan, then onions, garlic saute about 3-4 minutes; add cumin and sauté another minute. Return meat to pot.

Add the beans, pumpkin, green chilis, broth, chili powder, oregano and bay leaves.

Cover and cook on high pressure 25 minutes. Natural release.

Remove bay leaves and adjust seasoning to taste before serving.

Roasted a Free Range chicken with baby potatoes. I cute the potatoes in half and placed them flat-side down in a single layer in the baking dish, then put the whole chicken on top of the potatoes. The potatoes crisped up so they were crunchy and the chicken was cooked perfectly.

Spanish shrimp and roasted potatoes. I had my doubts, but the potatoes mixed with aioli, shallots, peppers, zucchini and garlic was very tasty!
